Creamy Chicken, with Cheesy-Garlic Bread and Chocolate Strawberries.
This dinner is perfect for celebrating a date night, anniversary, Valentine's Day, Galentine's Day, big night in- whatever excuse you like. Not only is this ridiculously easy to pull off, but big easy flavours like cheese, garlic and chocolate will make every course a hit.
The strawberries can be made and plated beforehand so you won't need to dash out mid-meal to fix up the dessert. Serve the bread with the main dish, because its great to mop up the creamy, mushroomy sauce with.
Cheesy-Garlic Bread:
Ingredients:
White Boule Loaf
Knob of butter
Finely chopped parsley
Crushed garlic
Mozzarella
Recipe:
Hold the bread firmly to avoid tears. Cut the bread, across horizontally and then vertically to create separate diamonds. Do not cut down the full way, the bread needs to be intact.
Melt the butter in the microwave, add the garlic and parsley. Using a pastry brush, spread the mixture down the cracks.
Stuff each section with cheese.
Creamy Chicken with White Wine, Mushrooms and Garlic:
Ingredients:
Dash of olive oil
2 chicken breasts (skinless)
2 shallots
3 garlic cloves
100g chestnut mushrooms
Handful of black olives
200ml chicken stock
60ml white wine
100ml extra thick double cream
Sprinkle of parsley
A good handful of parmesan
Green beans (to serve)
Recipe:
In a large pan, fry the chicken in oil for about 5 minutes on each side (or until golden brown). Set aside.
In the same pan cook the shallots until translucent adding more oil if needed, then add the garlic and mushrooms.
Return the chicken to the pan and add the stock, white wine and olives. Cover with a lid and simmer on a low heat for 12-15 mins, or until the chicken is cooked through.
Meanwhile, cook the green beans in boiling water until tender.
Stir in the cream, parsley and parmesan (to taste). Serve immediately with the beans.
Chocolate Strawberries:
All you need is some fresh strawberries and chocolate of your choosing (white, milk, dark).
Melt the chocolate in the microwave in 30 second bursts.
Dunk the strawberries by holding the stem.
Leave to cool and set on a lined baking tray. You can decorate with biscuit crumbs, or another chocolate drizzle over the top.

Now, just put on your favourite playlist, cover the room in fairy lights and light up some candles. Voilà!
