BBQ-Bacon Koftas

With hand-cut chips, cheese mayonnaise and garlic-lemon mayonnaise.

This makes for an indulgent lunch or easy tapas dish to share. Cheesy, smoky and wrapped in bacon- what more could you want?
Prepare the chips first and whilst they are cooking, make the Koftas. Mix up the mayonnaise just before serving.
Hand-Cut Chips:
Ingredients:
4 potatoes (leave the skin on)
Salt
Pepper
A good dousing of olive oil
Recipe:
Preheat the oven to 200C.
Cut the potatoes into 1cm thick shapes.
Toss with olive oil and seasonings.
Bake in the oven for 40-50 mins.
BBQ Bacon Koftas:
Ingredients: (Makes 10)
1 350g packet sausage meat
4 handfuls breadcrumbs
4 handfuls mature cheddar, grated
1/4 red onion, very finely diced
2 tbsp honey barbecue sauce (+ more for glazing)
Bacon rashers
Recipe:
Preheat the oven to 200C.
In a bowl, mix the sausage meat, breadcrumbs, cheese, onion and barbecue sauce together.
Form the mixture into 10 round-ish sausage shapes. Spear with skewers. Wrap with bacon. Glaze the tops with honey barbecue sauce.
Cook for 10 minutes, then turn over and glaze the other sides. Cook for a further 15 minutes (or until golden brown).
Garlic-Lemon Mayonnaise:
Ingredients:
3 spoons mayonnaise
1 garlic clove, crushed
Squeeze of a lemon
Recipe:
Mix. Ta-dah!
Cheese Mayonnaise:
Ingredients:
3 spoons mayonnaise
1 handful mature cheddar, grated
Recipe:
Mix.
Microwave for 1 minute, then mix again.
Kofta, don't go bacon my heart.
