Blue Cheese Apple Tarts

Use up the last of autumn's apples in this minimum-effort lunch recipe. Apple, blue cheese and crispy puff pastry is a divine combination, which can be served with hot soup or salad. These rustic little squares look great, and what can I say- everyone loves a good tart.



Ingredients:

  • 1 x 320g packet of ready rolled, all-butter puff pastry

  • Plain flour, for dusting

  • Knob of butter

  • 1 onion, thinly sliced

  • 1apple, peeled, cored and grated

  • 1 tbsp light muscavado sugar

  • 2 tsp balsamic vinger

  • 100g blue cheese, crumbled into small cubes

  • 50g medium cheddar

  • A grating of Parmigiana Reggiano

  • 1 apple, thinly sliced (to decorate)

  • Black, pitted olives, halved (to decorate)

  • 1 egg, beaten

  • Salad (to serve)


Recipe:

  • Preheat the oven to 200C and line a baking sheet with parchment.

  • Lay the pastry on a floured surface and re-roll a little. Cut into 8 rectangles.

  • For each rectangle, score a border with a knife (not cutting the whole way through the pastry) about 1cm from the edge. Prick the middle with a fork. Transfer to the baking tray.

  • Heat the butter, onions and apple in a pan until soft over a low heat. Stir in the sugar and balsamic and cook until caramelised.

  • Spoon the apple-onion mix onto each rectangle. Sprinkle with the blue cheese and cheddar. Arrange the apple slices in the corner and the olives over the rest. Grate a sprinkling of the Parmigiana Reggiano over the whole tart.

  • Brush the borders with egg and bake in the oven for 20- 25 mins until golden and crispy.

  • Serve with salad or soup.



Prepare yourself for a total eclipse of the tart. Enjoy! x
