Cider and Honey Chicken

With Apple and Cucumber Tzatziki


You know its been coming for a while. Men in the beer gardens of pubs have put their tops back on; the tan lines from your sunglasses are fading; schoolchildren have taken over the morning buses; there’s no longer a swimwear section in your local supermarket- summer has reached its end.


Fret not, however, as the warming ginger, sparkling cider and sweet honey marinade will have you dreaming of balmy days. The apple in the Tzatziki pairs perfectly with the subtle cider flavours in the chicken. Cook this dish outside on the BBQ so you can reminisce on those fond summer memories but bring the food in to eat so you don't freeze over when the sun has gone in.


Ingredients- Marinade:

  • 6 chicken breasts

  • 5 garlic cloves, crushed

  • Thumb of ginger, cut into small cuboids

  • 3 tbsp clear honey

  • 2 tbsp cider vinegar

  • 1 tbsp marmite

  • 1 tbsp bbq sauce

  • 300ml cider

  • 1 tsp cumin

  • 1 tsp cayenne

  • 1 tsp paprika

  • 1 tsp cornflour

  • Salt and pepper

Ingredients- Glaze:

  • 4 tbsp honey

  • 1 tbsp BBQ sauce

  • 1 tbsp marinade

  • tsp paprika

Ingredients- Tzatziki:

  • 1 medium cucumber, diced finely

  • 1/2 an apple

  • 3 dollops of greek yogurt

  • A hefty squeeze of lime

Ingredients- (to serve):

  • 1 yellow pepper, quartered

  • 1 red pepper, quartered

  • Red onion, sliced

  • Wraps (optional)

Recipe (serves 6, or 4 hungry people):

  1. Begin by cutting your chicken breasts into small cubes

  2. Mix the ingredients of the marinade together in a large bowl, and add the chicken. Marinate for 6 hours.

  3. Skewer 4 cubes of chicken onto each stick and place to one side.

  4. Mix all the ingredients of the glaze together and pour half over the chicken skewers.

  5. Cook the chicken and the pepper quarters on the barbecue for 10 minutes off the hot coals.

  6. Meanwhile, prepare the Tzatziki by mixing all ingredients into a small serving bowl and slice the red onion.

  7. Check the chicken is cooked through before using the rest of the glaze to coat each chicken skewer. Transfer over each skewer directly over the hot coals to give them some colour.



Serve the barbecued chicken and peppers with Tzatziki, red onion and wraps over candlelight with plenty of cider to wash it all down!
