Honey-Caramelised Grapefruit

With Greek Yoghurt and Pistachios.

The jewel-like colours, the sophisticated taste palette, the golden streaks of honey- this is an ideal brunch for when you want to impress somebody (little do they know it took 5 minutes to rustle up).


Ingredients:

  • 1 pink grapefruit

  • 2 tbsp honey

  • 2 spoonfuls of greek yoghurt

  • Sprinkling of whole blanched pistachios, crushed slightly with your fingers



Recipe:

  1. Slice the grapefruit in half. Carefully cut around each segment, leaving the flesh within the shell of the skin. This is just so that when you come to eat, you can spoon out each section with ease.

  2. On a medium heat, add the honey to the pan and place the prepared grapefruit halves flesh down in the pan. Check every now and then by lifting up the halves. Remove from the pan once they have begun to caramelise.

  3. Dollop a spoon of greek yoghurt on top of each half and sprinkle with pistachios. Drizzle some more honey over the top, if you wish.
