Chocolate-Berry, Cinnamon-Plum, Toffee-Apple

I'm currently struggling greatly with the hellish nightmare that is a dissertation. And I've found the absolute best way to get myself out of bed in the morning is knowing that I've got a delicious breakfast planned. These Morning Oats may be a little more extravagant than your usual microwave porridge with a bit of jam swirled through- but they are deceptively easy and 100% worth the washing up.

Basic Recipe:

Ingredients: (per person)

  • 7 spoons rolled oats

  • Enough milk to cover the oats ( I used almond milk, but you can use whatever you please)

Recipe:

  1. On a hob, medium heat, stir the oats and milk until creamy. Add water if it gets too thick for your liking.

Chocolate-Berry:

Ingredients: (per person)

  • (Basic Recipe) +

  • A handful of frozen berries (for the porridge)

  • A handful of frozen berries (for the coulis)

  • 5 chocolate buttons

  • Natural Yoghurt

Recipe:

  1. Make the basic recipe and when almost cooked stir through some frozen berries. Don't worry about defrosting them, they soon melt and turn the whole porridge into a bright pinky-purple colour!

  2. Meanwhile, in a small bowl, microwave another handful of frozen berries until bubbling. Roughly stir to make a coulis.

  3. Top your porridge with the coulis, buttons and a spoonful of yoghurt.

This bowl is a splash of summer on a rainy day!

Cinnamon-Plum:

Ingredients:

  • (Basic Recipe) +

  • 1tsp cinnamon

  • 1tsp nutmeg

  • 2 small plums, sliced

  • Maple Syrup

  • Butter

Recipe:

  1. Make the basic recipe and when almost cooked stir through the cinnamon and nutmeg.

  2. Meanwhile, in another pan, melt the maple syrup and butter together until bubbling. Add the plums and stir occasionally on a low heat.

  3. Top your porridge with the caramelised plums, a spoonful of yoghurt and an extra sprinkling of cinnamon.

This one is my personal favourite!

Toffee-Apple:

Ingredients:

  • (Basic Recipe) +

  • 1 small apple, peeled and cubed

  • 1 small apple, sliced

  • Nutmeg

  • Honey

Recipe:

  1. Make the basic recipe but add in the peeled and cubed apple pieces to the mix from the beginning. When almost cooked stir through the nutmeg.

  2. Meanwhile, in another pan, add the honey and sliced apples on a low heat. The honey will caramelise into a hard toffee shell around each apple piece if left long enough.

  3. Top your porridge with the toffee apple pieces, a spoonful of yoghurt and an extra sprinkling of nutmeg.

Like bonfire night in a bowl!

Oat-rageous! Enjoy! x
