Plum Pulled Pork

This is a dish for when you need something fail safe, like when cooking for your boyfriend's parents for the first time. Other than making everyone wait whilst I took a billion pictures, I think it went down well.


There's nothing better than bunging everything into the slow cooker and coming back hours later to find something delicious. The plum adds a little bit of tartness to the BBQ flavours that really works. The absolute lowest of low effort- don't tell your diners how easy it was!


Ingredients:

  • Boneless shoulder of pork

  • 3 tsp ground cumin

  • 2 tsp smoked paprika

  • 2 tsp pepper

  • 2 tsp brown sugar

  • 1 tsp salt

  • White onion, sliced

  • Tinned plums

  • A mugful of beer

  • 600 ml beef stock

  • A mugful of BBQ sauce

  • 50/ 50 mix plum jam and BBQ sauce

  • Flat bread

  • Coleslaw

Recipe:

  1. Rub the pork all over with the cumin, paprika, pepper, brown sugar and salt. Leave over night.

  2. Place the onion and tinned plums at the bottom of the slow cooker.

  3. Cut the fat off the pork. Place in the slow cooker, skin side up.

  4. Pour in the beer, stock and BBQ sauce until almost covered.

  5. Leave on a low heat for 8 hours.

  6. Remove meat from the slow cooker and cut off any remaining fat. Tear the meat with a fork.

  7. Make the plum and BBQ sauce. In a pan stir some pulled pork with the sauce, coating the meat.

  8. Serve with flat bread and coleslaw.
