Pancetta and Plum Pancakes

Pancakes are the reigning champions of the breakfast world. Like something out of a wholesome American film, they not only make for a delicious breakfast but also say ‘Forgive me?’, ‘I love you.’ and ‘Love me, I’m a domestic goddess.’ A gesture more casual than flowers but more grand than a cuppa, these pancakes are super easy yet highly effective. Vanilla, bacon and plum sounds like an odd concoction, but trust me- it works!

Recipe:
Ingredients:
400g unsmoked pancetta
3 plums, diced (plus more to serve)
200g self-raising flour
1.5 tsp baking powder
3 tbsp golden caster sugar
3 large eggs
25g melted butter (plus more for cooking)
200ml milk
1 tsp vanilla extract
Greek yoghurt (to serve)
Maple syrup (to serve)
Other fruit (to serve)
Instructions: (Makes approx. 20 pancakes)
Fry the pancetta in a frying pan.
Combine the dry ingredients (flour, baking powder, sugar) in a large mixing bowl.
Add the wet ingredients (eggs, butter, milk, vanilla extract) and whisk until smooth.
Stir in the pancetta and plums.
Heat a teaspoon of butter on medium heat in a large, non-stick frying pan.
Spoon the batter into the pan to create rounds of 8cm in diameter.
Cook each pancake until tiny bubble form and then flip until the other side is cooked.
Serve your pancakes in a stack with greek yoghurt, maple syrup and fresh fruit.
